Curried Egg Salad

- 6 hard-cooked eggs, chopped
- 1/2 c. red onion, sliced
- 1/2 c. low-fat mayonnaise
- 1/2 tsp. curry powder
- 1 carrot, peeled and shredded
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 3 c. lettuce, shredded
- 1 large tomato, thinly sliced
- 6 whole wheat pitas, cut in half
Directions

1Cover eggs in pan with cold water by 1 inch.

2Bring to a boil; turn off heat.

3Let sit covered for 15 minutes.

4Drain. Rinse under cold water.

5Mix eggs, onion, mayonnaise, curry, carrot, salt and pepper.

6Divide lettuce, tomato and egg mixture into pitas.
