Curried Egg Salad

Ingredients

  • 6 hard-cooked eggs, chopped
  • 1/2 c. red onion, sliced
  • 1/2 c. low-fat mayonnaise
  • 1/2 tsp. curry powder
  • 1 carrot, peeled and shredded
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 3 c. lettuce, shredded
  • 1 large tomato, thinly sliced
  • 6 whole wheat pitas, cut in half

    Cover eggs in pan with cold water by 1 inch.

    Bring to a boil; turn off heat.

    Let sit covered for 15 minutes.

    Drain. Rinse under cold water.

    Mix eggs, onion, mayonnaise, curry, carrot, salt and pepper.

    Divide lettuce, tomato and egg mixture into pitas.
