Curried Rice

  • 2 1/2 c. water
  • 1/2 tsp. salt
  • 1 c. uncooked long grain rice
  • 1/2 c. boiling water
  • 1/3 c. raisins
  • 2 Tbsp. butter or margarine, melted
  • 2 tsp. curry powder
  • 1/3 c. chopped walnuts, toasted

Directions

    Combine 2 1/2 cups water and salt in a medium saucepan.

    Bring to a boil and add rice.

    Cover, reduce heat and simmer 20 minutes or until rice is tender and water absorbed.

    Pour 1/2 cup boiling water over raisins.

    Let stand 1 minute.

    Drain raisins; set aside.

    Combine butter and curry powder, stirring to blend.

    Stir curry mixture, raisins and walnuts into cooked rice.

    Yield: 4 servings.
