- 2 1/2 c. water
- 1/2 tsp. salt
- 1 c. uncooked long grain rice
- 1/2 c. boiling water
- 1/3 c. raisins
- 2 Tbsp. butter or margarine, melted
- 2 tsp. curry powder
- 1/3 c. chopped walnuts, toasted
Directions

1Combine 2 1/2 cups water and salt in a medium saucepan.

2Bring to a boil and add rice.

3Cover, reduce heat and simmer 20 minutes or until rice is tender and water absorbed.

4Pour 1/2 cup boiling water over raisins.

5Let stand 1 minute.

6Drain raisins; set aside.

7Combine butter and curry powder, stirring to blend.

8Stir curry mixture, raisins and walnuts into cooked rice.

9Yield: 4 servings.
