Curried Rice Salad

Ingredients

  • 1 c. chopped almonds
  • 1 Tbsp. margarine
  • 1/3 c. mayonnaise
  • 1 clove garlic, chopped
  • 1 Tbsp. curry powder
  • 1 Tbsp. lemon juice
  • 1/2 tsp. cumin powder
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. coriander
  • 2 drops red hot sauce
  • 3 c. hot, cooked rice
  • 1/2 red bell pepper, chopped
  • 1/2 c. sliced green onion
  • 1/2 c. raisins
  • 1/4 c. shredded coconut

    Soak raisins in boiling water for 20 minutes.

    Saute almonds in margarine until crisp; drain and reserve.

    Combine next 9 ingredients.

    Stir hot rice into the dressing.

    Fold in bell pepper, green onions, raisins and coconut.

    Chill.

    Just before serving, fold in almonds.
