Curry Fish Skewers

  • 1 1/2 lb firm white fish fillets, coarsely chopped
  • 2 tbsp red curry paste
  • 2 None green onions, coarsely chopped
  • 1 oz fresh cilantro leaves, coarsely chopped
  • 1 cup sweet chili sauce
  • None None peanut oil, for deep-frying

Directions

    In a food processor, combine fish, curry paste, green onions and cilantro. Process until combined. Add 2 tbsp sweet chili sauce. Season. Shape into 12 sausages.

    Heat oil in large deep saucepan. Deep-fry fish cakes until browned and cooked through.

    Skewer each fish cake with a bamboo skewer. Serve with remaining sweet chili sauce.
