Curry Ginger Dressing

Ingredients

  • 1 tbsp olive oil
  • 2 tsp curry powder (I use sweet from Penzeys)
  • 1/4 cup minced red onion or shallots
  • 1/3 cup mayonnaise
  • 1 tbsp vinegar
  • 1/4 tsp cayenne (or to taste)
  • 1 tsp Dijon style mustard
  • 2 to 3 tablespoons sweet ginger bits (I get these at Penzeys Spices)
  • 1/4 to 1/2 teaspoon salt

Directions

    Heat olive oil over medium heat.

    Add curry powder and cook for 2 minutes.

    In a bowl, mix together red onions or shallots, ginger bits, mayonnaise, vinegar, mustard, salt, and cayenne.

    Add the curry paste to the mayonnaise mixture and mix well.

    *Add 1 to 2 cups tuna or cooked chicken and some chopped pecans to taste and you have a great salad to place on sandwiches.
