- 2 pork chops, trimmed and cubed
- 1 large onion, chopped
- 4 large carrots, sliced
- 2 large potatoes, sliced
- 1 large green pepper, chopped
- 9 Tbsp. flour
- 1 c. water
- 2 Tbsp. curry powder
- cooked rice
Directions

1In large pan, simmer pork chop cubes in salted water (enough to cover) 45 to 60 minutes.

2Add more hot water; enough to make as much curry as you want; then put in onions, carrots and potatoes. Salt and pepper to taste.

3Bring to boil, lower heat and simmer 2 hours, stirring occasionally, covered.

4Add the green pepper and simmer another 15 minutes.

5Add flour to water to make sauce for thickening.

6Stir into vegetables.

7Add curry powder.

8Serve over regular cooked rice, not instant.

9Leftovers freeze nicely.
