- 2 c. scalded milk (let cool and remove scum)
- 8 Tbsp. cooked rice
- 1/3 c. sugar
- 3 eggs
- 1 tsp. vanilla
- cinnamon and sugar mix
Directions

1Beat eggs well.

2Add sugar, milk, vanilla and rice.

3Pour mixture into a 2-quart Pyrex dish; sprinkle top with cinnamon and sugar mix.

4Place Pyrex dish in a pan with hot water.

5Bake in a 350° oven for about 25 to 30 minutes.

6Try inserting knife at 25 minutes; when it comes out clean, it's done.

7Don't overbake.
