  • 2 handfuls Tiny potatoes unpeeled
  • 3 tablespoons Butter
  • 1 teaspoon Olive oil
  • 1/4 cup Chopped shallots
  • Cake Dalt and pepper

    Create a double ply foil packet large enough to hold all the ingredients ( Or single ply of parchment/foil wrap ). Leave enough margin to fold it over snugly. Place all the ingredients in the packet. To feed a crowd do several packets These can be made ahead which is another plus

    While the meat is resting, or off to the side, put the packets on the grill for about 20 minutes, turning once

    Dump the packets into attractive seving dishes and sprinkle with lots of chopped parsley
