Danish Cauliflower Soup

Ingredients
- 1 large head cauliflower
- 4 Tbsp. butter or margarine
- 4 ?? flour
- 5 c. chicken broth
- 1/2 c. minced onion
- 1 c. minced celery
- 1 c. half and half
- salt and pepper to taste
Directions

1Break cauliflower into flowerets.

2Boil in chicken broth until tender.

3Remove from broth; mash with fork.

4Save broth.

5Melt butter or margarine.

6Saute celery and onion.

7Add flour; mix well.

8Add reserved chicken broth, a little at a time, stirring to keep smooth.

9Simmer about 5 minutes.

10Add the cauliflower and half and half; heat thoroughly.

11Do not boil.

12Freezes well. Serves 5 to 6.
