Date and Ginger Loaf

  • 1 cup chopped dates, roughly chopped
  • 1/4 cup glace ginger, finely chopped
  • 1 teaspoon bicarbonate of soda
  • 1 1/2 cups SR flour
  • 1/2 cup brown sugar
  • 1 teaspoon mixed spice
  • 1 egg, lightly beaten
  • 125g tub PHILADELPHIA Light Spreadable Cream Cheese

Directions

    Place the dates, ginger and bi-carb in a bowl.

    Pour 1 cup boiling water over the top and stand for 10 minutes.

    Combine the flour, sugar and spice.

    Fold in the date mixture and beaten egg.

    Pour into a lined 20 x 10 cm loaf pan.

    Bake at 180 degrees C for 40-45 minutes or until an inserted skewer comes out clean.

    Allow to cool on a cake rack.

    Cut into slices and serve spread with some Philly*.
