  • 1 c. dates, chopped
  • 1 tsp. baking soda
  • 1 Tbsp. butter
  • 3/4 c. sugar
  • 1 egg yolk
  • 1 tsp. vanilla
  • pinch of salt
  • 1 3/4 c. flour
  • 1/2 c. nuts, chopped
  • 1 egg white
  • 3/4 c. boiling water

Directions

    Mix dates, baking soda and boiling water; let stand 20 minutes.

    Mix butter, sugar, egg yolk, salt and vanilla.

    Add date mixture alternately with flour to sugar, egg mixture.

    Add nuts. Beat egg white stiff and fold into mixture.

    Bake in loaf pan 45 minutes in 325° oven.
