Ingredients

  • 1 c. chopped dates
  • 60 grams butter
  • 1 c. brown sugar, firmly packed
  • 3/4 c. water
  • 1/2 tsp. bicarb of soda
  • 1 egg, lightly beaten
  • 1/2 c. chopped walnuts or pecans
  • 1 c. self-rising flour or 1 c. flour plus 2 tsp. baking powder

Directions

    Combine dates, butter, sugar and water in a pan and stir constantly over heat without boiling until the sugar is dissolved. Bring to a boil and remove from the heat.

    Transfer mixture to a large bowl to cool to room temperature.

    Grease 2 nut roll tins. Stir soda, egg and nuts into date mixture, then sifted flour. Spoon mixture evenly into prepared tins.

    Bake in moderate oven at 180°C for about an hour.

    Stand rolls in tins for 10 minutes with lids on.

    Remove lids, turn on wire rack to cool.

    When cool, serve buttered.
