- 1 c. chopped dates
- 60 grams butter
- 1 c. brown sugar, firmly packed
- 3/4 c. water
- 1/2 tsp. bicarb of soda
- 1 egg, lightly beaten
- 1/2 c. chopped walnuts or pecans
- 1 c. self-rising flour or 1 c. flour plus 2 tsp. baking powder
Directions

1Combine dates, butter, sugar and water in a pan and stir constantly over heat without boiling until the sugar is dissolved. Bring to a boil and remove from the heat.

2Transfer mixture to a large bowl to cool to room temperature.

3Grease 2 nut roll tins. Stir soda, egg and nuts into date mixture, then sifted flour. Spoon mixture evenly into prepared tins.

4Bake in moderate oven at 180°C for about an hour.

5Stand rolls in tins for 10 minutes with lids on.

6Remove lids, turn on wire rack to cool.

7When cool, serve buttered.
