  • 3 eggs, separated
  • 1 c. sugar
  • 1 Tbsp. vanilla
  • 1 c. flour, sifted
  • 2 lb. dates, chopped
  • 2 c. pecans, chopped
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • powdered sugar

Directions

    Beat egg yolks until light. Add sugar. Sift flour and baking powder together. Add chopped dates and nuts to flour, mixing well so as to separate them.

    Add to eggs and sugar the vanilla and salt. Beat egg whites stiff.

    Mix flour mixture and egg mixture together. Fold in egg whites. Cook in a greased 6 x 12-inch pan at 300° until done. Cut in 1 x 4-inch strips while still hot and roll in powdered sugar.
