- 1 (8 oz.) pkg. chopped dates
- 2 c. grated carrots
- 3/4 c. coconut
- 1/2 c. chopped nuts
- 2 c. sifted flour
- 1/2 tsp. salt
- 1 tsp. baking powder
- 3/4 tsp. baking soda
- 1 tsp. cinnamon
- 2 eggs
- 3/4 c. brown sugar
Directions

1Combine the first 4 ingredients and set aside.

2Sift the next 5 ingredients.

3Beat sugar and shortening until creamy.

4Beat in eggs, 1 at a time.

5Stir in sifted ingredients.

6Add date mixture. Put in a greased 9 x 5 x 3-inch loaf pan.

7Bake at 350° for 1 hour or until done.
