Ingredients
- 1 pound dates, seeded
- 1 ounce. chilies, dry
- 3 cloves garlic, peeled
- 1/2 ounce. ginger, peeled
- 2 c. white vinegar
- 1/2 c. sugar
- Salt to taste
Directions

1Remove seeds from dates, grind them and set aside.

2Grind the chilies, garlic, ginger, and half the amount of the vinegar and set aside.

3Make a syrup of sugar and remaining vinegar.

4Add in grnd ingredients and salt.

5Boil together till thick.

6Let it cold, then add in dates and store covered, in the refrigerator.

7Variation: For Tomato Chutney, use 1 lb.

8fresh tomatoes, increase sugar to 2 c., and reduce vinegar to 1 c.. Keep all remaining ingredients in the same proportions.
