Ingredients

  • 1 1/4 c. water
  • 2 c. chopped dates
  • 2 tsp. cinnamon
  • 1/3 c. vegetable shortening
  • 1/2 tsp. nutmeg
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 Tbsp. water
  • 1 1/4 tsp. liquid sugar substitute
  • 2 1/4 c. flour
  • 1 tsp. baking powder

Directions

    Combine water with dates, cinnamon, shortening and nutmeg. Boil for 3 minutes and cool.

    Add eggs, soda, salt, 2 tablespoons water and sweetener.

    Mix flour, soda, salt and baking powder.

    Add to cooled mixture.

    Drop by teaspoon onto greased cookie sheet. Bake at 350° for 12 to 15 minutes.
