- 1 c. dates, ground
- 1/2 c. nuts, ground
- 1/2 tsp. vanilla flavor
- 2 egg whites
- 2/3 c. sugar
- 1/2 tsp. vanilla flavor
- food coloring, if desired
Directions

1Dates and nuts can be ground together in food processor.

2In medium bowl, combine dates, nuts and vanilla flavoring, mix well. Shape 1/2 teaspoons of mixture into balls.

3Beat egg whites until soft peaks form.

4Gradually add sugar until stiff peaks form.

5Stir in flavor and food color.

6Drop balls one at a time into meringue. Coat well to form 1-inch balls.

7Remove with spoon and drop onto greased cookie sheet.

8Bake at 250° for 30 minutes.

9Immediately remove from pan and cool completely.

10Makes about 4 dozen.
