Date Nut Bread

Ingredients

  • 1 c. dates, cut in small pieces
  • 3/4 c. sugar
  • 3/4 c. boiling water
  • 1 Tbsp. baking soda
  • 1 egg, separated
  • 1 Tbsp. melted butter
  • 1/2 tsp. vanilla
  • 3/4 c. flour
  • pinch of salt
  • 1/2 c. chopped nuts

    Sprinkle baking soda over dates. Add water.

    Let cool and mash.

    Beat egg yolk and pour over sugar, salt and melted butter. Pour this over date mixture. Add flour and beat with spoon. Add vanilla and nuts.

    Fold in beaten egg white.

    Pour mixture into greased and floured bread pan and bake for 1 hour at 325°.

    Check with toothpick.
