Ingredients

  • 1 3/4 c. chopped pitted dates
  • 2 Tbsp. butter
  • 1 1/4 c. boiling water
  • 2 1/4 c. all-purpose flour
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 3/4 c. sugar
  • 1/4 c. honey
  • 1 1/2 tsp. baking soda
  • 1 egg, slightly beaten
  • 1/2 tsp. baking powder
  • 1/2 c. coarsely chopped walnuts or mixed nuts

    Grease a 9 x 5-inch loaf pan.

    Preheat oven to 350°.

    Combine first 5 ingredients.

    Add boiling water; let it cool.

    Add egg to date mixture.

    Sift together flour, baking powder and salt; mix into date mixture.

    Stir in nuts and vanilla.

    Spoon into pan. Bake 1 1/2 hours.
