  • 3/4 c. chopped nuts
  • 1 c. cut up pitted dates
  • 1 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 Tbsp. shortening
  • 3/4 c. boiling water
  • 2 eggs
  • 1 tsp. vanilla
  • 1 c. granulated sugar
  • 1 1/2 c. flour

Directions

    Mix first 4 ingredients with a fork; add shortening and water. Let stand 20 minutes; heat oven to 350°.

    Beat eggs with fork, add vanilla, sugar and flour, beating with fork.

    Add date mixture, mixing to just blend.

    Bake 1 hour and 5 minutes or until done.

    Makes 1 loaf.
