  • 4 Tbsp. sweet butter, cut into 6 chunks
  • 1 c. pitted dates, coarsely chopped
  • 1/4 c. brown sugar
  • 1/4 c. granulated sugar
  • 3/4 c. boiling water
  • 1 egg, beaten
  • 2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/2 c. shelled walnuts, chopped
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. salt

Directions

    Preheat oven to 350° and grease a 9 x 5 x 3-inch pan.

    Place butter in a large mixing bowl.

    Place dates on top and pour both sugars over.

    Pour boiling water over ingredients in the boil. Let sit for 7 minutes; stir well.

    When mixture is cool, add the egg and mix well.

    Sift the flour, baking powder and salt together.

    Add to date mixture, beating for 30 seconds.

    Stir in walnuts and vanilla.

    Pour mixture into prepared pan.

    Bake for 45 to 50 minutes.
