Date-Nut Cookie Filling

  • 8 ounces dates chopped (one commercial box)
  • 1 cup water
  • 2 tablespoons sugar granulated
  • 1 1/2 teaspoons orange zest grated
  • 1/2 teaspoon vanilla extract pure
  • 1/4 cup walnuts or pecans, finely chopped

Directions

    In a medium-small saucepan, stir together the dates, water and sugar.

    Heat to boiling over medium heat.

    Reduce heat to low; cook, stirring constantly, until mixture thickens, about 4 or 5 minutes.

    Remove from heat and cool 5 minutes.

    Stir in orange zest and vanilla extract; set aside and cool completely before filling cookies or pastries.

    NOTE: This filling will keep in the freezer for months or can be refrigerated for up to 2 weeks.
