- 8 ounces dates chopped (one commercial box)
- 1 cup water
- 2 tablespoons sugar granulated
- 1 1/2 teaspoons orange zest grated
- 1/2 teaspoon vanilla extract pure
- 1/4 cup walnuts or pecans, finely chopped
Directions

1In a medium-small saucepan, stir together the dates, water and sugar.

2Heat to boiling over medium heat.

3Reduce heat to low; cook, stirring constantly, until mixture thickens, about 4 or 5 minutes.

4Remove from heat and cool 5 minutes.

5Stir in orange zest and vanilla extract; set aside and cool completely before filling cookies or pastries.

6NOTE: This filling will keep in the freezer for months or can be refrigerated for up to 2 weeks.
