Date Nut Fingers

  • 2 eggs
  • 1/2 c. sugar
  • 1/2 tsp. vanilla
  • 1/2 c. sifted all-purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1 c. coarsely chopped nuts (walnuts or pecans)
  • 1 (8 oz.) pkg. Dromedary pitted dates, chopped

Directions

    Beat eggs until foamy.

    Beat in sugar and vanilla.

    Sift dry ingredients and stir into other ingredients.

    Mix in nuts and chopped dates.
  5. 5
    (Best if mixed with hands to blend dates completely into mixture.)

    Spread into greased 8-inch square pan. Bake in moderate slow oven (325°) for 25 to 35 minutes or until top has a dull crust.

    Cut in finger sized pieces while warm. Cool, then remove from pan and roll in powdered sugar.

    Makes 21 fingers (1 x 2 1/2-inches).
