Ingredients

  • 2 C cake flour (or bread flour)
  • 1 C whole wheat flour (or Oat meal... not instant.)
  • 1 1/2 pitted chopped dates
  • 1 C. brown sugar
  • 1/2 tsp vanilla
  • 1 C mayonaise
  • 1 tbl bking sda
  • 1 C chopped nuts

Directions

    Grease and lightly flour a 9X12 loaf pan. Mix dry ingredients in a bowl set aside.. Place chopped dates and baking soda in small saucepan w/ 1/3 c water.. bring to a boil. Set aside to cool.

    Combine date mixture, mayo,vanilla , nuts and dry mix together.Stir well. Pour into baking pan, Bake at 340 for 50 minutes.

    When done.cool and invert on baking rack.
