  • 1 1/2 c. date pieces
  • 3/4 c. oleo
  • 1 1/2 c. sugar
  • 2 extra large eggs
  • 1 1/2 tsp. vanilla
  • 1/3 tsp. salt
  • 1 1/2 c. water
  • 1 1/2 tsp. baking soda
  • 1 c. pecan pieces
  • 2 1/2 c. flour

Directions

    Soak dates in hot water at 120° for 10 minutes.

    Drain and refrigerate until cold.

    Cream oleo and sugar.

    Add eggs, vanilla, salt, water, baking soda, flour and pecans.

    Mix only until combined.

    Fold in dates.

    Fill muffin tins 2/3 full.

    Bake at 350°

    for 20 minutes.
