- 1 1/2 c. date pieces
- 3/4 c. oleo
- 1 1/2 c. sugar
- 2 extra large eggs
- 1 1/2 tsp. vanilla
- 1/3 tsp. salt
- 1 1/2 c. water
- 1 1/2 tsp. baking soda
- 1 c. pecan pieces
- 2 1/2 c. flour
Directions

1Soak dates in hot water at 120° for 10 minutes.

2Drain and refrigerate until cold.

3Cream oleo and sugar.

4Add eggs, vanilla, salt, water, baking soda, flour and pecans.

5Mix only until combined.

6Fold in dates.

7Fill muffin tins 2/3 full.

8Bake at 350°

9for 20 minutes.
