- 1 1/2 c. pitted chopped dates
- 3/4 c. oleo
- 1 1/2 c. sugar
- 2 large eggs
- 1 1/2 tsp. vanilla
- 1/3 tsp. salt
- 1 1/2 c. water
- 1 1/2 tsp. baking soda
- 1 c. chopped pecans
- 2 1/2 c. flour
Directions

1Soak dates in

23 cups hot water 10 minutes to plump.

3Drain off water and refrigerate dates.

4They must be cold before using. Cream together oleo and sugar until well blended.

5Add eggs, vanilla, salt, water, baking soda, pecans and flour.

6Mix as little as possible because gluten will develop and make muffins tough.

7Fold in dates.

8Spoon batter into muffin cups and bake in preheated 350° oven for 20 to 30 minutes.
