Date Nut Pinwheels

  • 2 1/4 c. chopped dates
  • 1 c. granulated sugar
  • 1 c. water
  • 1 c. chopped pecans or walnuts
  • 1 c. vegetable shortening
  • 2 c. firmly packed brown sugar
  • 3 eggs, well beaten
  • 4 c. flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda

Directions

    Combine dates, granulated sugar and water in a saucepan. Cook over low heat until thick, about 10 minutes.

    Cool, and then stir in nuts; set aside.

    Cream shortening.

    Add sugar gradually. Add eggs and beat well.

    Sift together flour, salt and soda; add and mix well.

    Chill thoroughly.

    Divide mixture in half and roll each section into a rectangle a little less than 1/4-inch thick. Spread date fillings to edges and roll up from long side like a jelly roll.

    Wrap rolls in waxed paper and chill overnight.
