Ingredients

  • 2 c. sugar
  • 1 c. milk
  • 1 Tbsp. butter
  • 1 c. chopped dates
  • 1 tsp. vanilla
  • 1/2 c. finely chopped nuts
  • 1 1/2 c. coarsely chopped nuts

Directions

    Combine sugar, milk and butter in heavy 2-quart saucepan. Blend thoroughly.

    Place over low heat; stir until sugar is dissolved and mixture is boiling moderately.

    Cover, cook 3 minutes.

    Remove cover.

    Use silver knife blade wrapped in damp cloth to remove any crystals that form on side of pan.

    Stir occasionally.

    Cook to soft ball stage (234°).

    Add dates; mix well.

    Again, cook to soft ball stage.

    Remove from heat; add vanilla.

    Cool without stirring to lukewarm (116°).

    Beat until very thick.

    Add finely chopped nuts.
