Ingredients
- 1 1/2 c. flour
- 3 c. corn meal
- 1 c. sugar
- 1/2 tsp. salt
- 1 c. milk
- 1 tsp. baking soda
- 3/4 c. melted shortening
- 3 beaten eggs
- 1 c. hot water
- 1 tsp. baking powder
- 4 lb. unpeeled figs (ripe, but firm)
- 3 1/2 lb. sugar
- 2 lemons, de-seeded and chopped
Directions

1Wash the figs in lukewarm water.

2Discard water.

3Leave the skins on the fruit and a short portion of the stem so the juices remain inside the fig.

4(This procedure also helps figs retain their shape throughout cooking.)

5Place the figs inside a large bowl or pot filled with the sugar.

6Let stand for at least 24 hours.

7(Figs make their own juices, somewhat like strawberries.)
