Day Ahead Chicken

Ingredients

  • 2 to 3 whole chicken breasts, halved
  • 1/2 c. honey
  • 1/2 c. Dijon mustard
  • 1 Tbsp. curry powder
  • 2 Tbsp. soy sauce

Directions

    Chicken may be skinned, if preferred.

    Place chicken snugly in baking dish, skin side down.

    Mix honey, mustard, curry and soy sauce.

    Pour over chicken and refrigerate for 6 hours or overnight, covered.

    Turn chicken skin side up.

    Cover with foil and bake 1 hour at 350°.

    Baste well with sauce and continue baking, uncovered, for 15 minutes.

    Spoon sauce over chicken and serve.
