Ingredients
- 1/2 c. all-purpose flour
- 1/2 c. cornmeal
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 lb. farm-raised catfish fillets
- 1/2 c. milk
- 1 qt. corn oil
Directions

1Mix together flour, cornmeal, salt and pepper.

2Dip fillets into milk, then dredge in flour and cornmeal mixture.

3Pour corn oil into a heavy 3-quart saucepan or deep fryer, filling no more than 1/3 full.

4Heat over medium heat to 375°.

5Fry one layer of fish at a time, turning once, for about 1 1/2 minutes on each side.

6Drain on paper towels and serve with hush puppies and coleslaw.
