  • 3 to 4 lb. deer roast
  • 3 bay leaves
  • 1 medium onion
  • 1/2 c. parsley flakes
  • 1/2 c. celery tips
  • juice of 1 lemon
  • 2 tsp. salt
  • 1 tsp. red pepper sauce
  • 2 c. stock from deer
  • 1 c. cold milk
  • 3 Tbsp. flour
  • 1 Tbsp. lemon juice
  • 1 Tbsp. orange juice
  • 3 Tbsp. capers

    Cook deer roast.

    Cook first 11 ingredients (except deer roast) until thickens, stirring constantly.

    Add lemon juice, orange juice and capers.

    Serve over thin sliced deer.
