- 1 qt. whole milk
- 1/4 c. rice
- 2 large eggs
- 1 tsp. vanilla
- 1/2 c. sugar
- cinnamon
Directions

1Cook milk, rice and sugar in top of covered double boiler for 1 hour, stirring frequently.

2Beat eggs until light and foamy. Remove top of double boiler from heat.

3Slowly add beaten eggs to rice mixture, stirring constantly.

4Add vanilla and return to heat.

5Continue stirring until mixture thickens, about 5 minutes. Pour into a 2-quart casserole; sprinkle with cinnamon. Refrigerate until chilled.

6Serve with whipped cream.
