Delicious Berry Cake

  • 2 cups Plain Yoghurt OR Kefir/clabber
  • 2 cups Sugar
  • 4 cups Flour
  • 1 teaspoon Baking Soda
  • 7 ounces, weight Butter, Melted
  • 2 teaspoons Vanilla Sugar
  • 1 pinch Salt
  • 2 cups Various Berries (strawberries, Raspberries, Blueberries, Blackberries, Cherries Etc.)
  • 3 Tablespoons Sugar
  • 2 Tablespoons Potato Starch

Directions

    Mix together the yoghurt, sugar, flour, baking soda, melted butter, vanilla sugar and salt. Pour the mixture into a square-shaped baking form (8x8 or similar) that you've lined with baking paper. Then mix berries, 3 tablespoons of sugar and 2 tablespoons of potato starch and spread this mixture on top of the dough.

    Heat the oven to 200 C (about 390 F). Bake the cake in the preheated oven for 20-30 minutes. If berries are very moist, the baking time may be longer, don't worry!

    Remove from the oven and leave the cake to cool a bit. Cut into square pieces.
