  • 1 (18 ounce) pkge. white cake mix
  • 1 (3 ounce) instant coconut cream pudding mix or 1 (3 ounce) instant vanilla pudding or 1 (3 ounce) cheesecake flavor instant pudding and pie filling
  • 4 eggs
  • 12 cup water
  • 1 tablespoon rum extract, plus water to make 1/3 cup
  • 14 cup oil
  • 1 cup flaked coconut (optional)

  • 1 (8 ounce) can crushed pineapple in juice
  • 1 12 teaspoons rum extract, plus
  • water, to make 1/4 cup
  • 1 (3 ounce) pkge. instant coconut cream pudding mix or 1 (3 ounce) instant vanilla pudding or 1 (3 ounce) cheesecake flavor instant pudding and pie filling
  • 1 (8 ounce) container frozen whipped topping
  • 1 cup flaked coconut

    Blend all ingredients except coconut.

    Beat 4 minutes at medium speed.

    Stir in coconut.

    Pour into 2 greased and floured 9 inch layer cake pans.

    Bake at 350 degrees for 25-30 minutes.

    Frosting.

    Combine all ingredients except whipped topping and coconut; beat until blended.
