  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. each: salt, nutmeg and cinnamon
  • 1 pkg. coconut pie filing
  • 1/4 c. sugar
  • 2 eggs
  • 2 Tbsp. oil
  • 1/4 c. skim milk
  • 1 c. pumpkin

    Bake at 350° in loaf pan for 45 minutes. Preheat oven.
