  • 1 (1 lb.) can (2 c.) beets
  • 1 c. vinegar
  • 3/4 c. granulated sugar
  • 1 Tbsp. salt
  • 1 Tbsp. mixed pickling spices
  • 6 hard-cooked eggs, peeled
  • 1 medium onion, thinly sliced and separated into rings

Directions

    Drain beets, reserving liquid.

    Pour liquid into a glass bowl; simmer sugar, vinegar, salt and spices until sugar dissolves.

    Mix with beet juice.

    Add beets, eggs and onion. Cover and chill at least 2 hours, preferably longer.
