- 1 c. diced, cooked ham
- 1 (2 oz.) jar mushroom stems
- 1/4 c. chopped onion
- 2 Tbsp. chopped green pepper
- 2 Tbsp. oleo
- 8 eggs or egg substitute
- 1/3 c. skim milk
- 4 slices American cheese
- salt and pepper to taste
Directions

1In a 10-inch skillet, cook ham, mushrooms, onion and green pepper in oleo over medium heat for 5 minutes.

2Beat together eggs, milk, salt and dash of pepper.

3Add to skillet.

4Continue cooking over medium heat, stirring constantly, for 4 minutes or until eggs are cooked throughout, but are still glossy and moist.

5Place cheese slices on top of mixture to melt for the last few minutes of cooking.
