Denver Breakfast Scramble

Ingredients

  • 1 c. diced, cooked ham
  • 1 (2 oz.) jar mushroom stems
  • 1/4 c. chopped onion
  • 2 Tbsp. chopped green pepper
  • 2 Tbsp. oleo
  • 8 eggs or egg substitute
  • 1/3 c. skim milk
  • 4 slices American cheese
  • salt and pepper to taste

Directions

    In a 10-inch skillet, cook ham, mushrooms, onion and green pepper in oleo over medium heat for 5 minutes.

    Beat together eggs, milk, salt and dash of pepper.

    Add to skillet.

    Continue cooking over medium heat, stirring constantly, for 4 minutes or until eggs are cooked throughout, but are still glossy and moist.

    Place cheese slices on top of mixture to melt for the last few minutes of cooking.
