- 6 strips bacon, diced
- 1/2 small onion, chopped
- 1/2 small green pepper, chopped/diced
- 1 tomato, chopped/diced
- 4 eggs, beaten
- 1/4 tsp. pepper
- 8 Tbsp. shredded cheese
- dash tabasco
- chopped parsley
Directions

1Heat a 10 - 12 inch skillet and crisp the bacon.

2Add onion and green pepper and cook to soften.

3Mix tomato with eggs, pepper, cheese and tabasco.

4Add to bacon/onion/pepper mix and cook on stove top over medium heat until the bottom is browned and set, (you have to look).

5After bottom is set, place under broiler and cook quickly until browned, done and puffy.
