- 2 c. granulated sugar
- 1 lb. raisins
- 2 c. hot water
- 1/4 c. vegetable oil
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 2 1/4 c. flour
- 2 tsp. baking soda
- 1 tsp. vanilla
- 1/2 c. chopped nuts (optional)
Directions

1In a saucepan, combine sugar, raisins, hot water, vegetable oil, cinnamon and nutmeg.

2Bring mixture to a boil.

3Continue cooking at a low boil for 5 minutes.

4Remove from heat and cool completely.

5Meanwhile, sift flour with baking soda.

6Blend dry ingredients with cooled raisin mixture.

7Add vanilla and chopped nuts, if desired.

8Turn into greased and floured 9 x 13-inch baking pan.

9Bake at 350° for 30 to 45 minutes or until cake top springs back to the touch.

10Makes 12 servings, each with 492 calories, 17 grams fat and 0 mg cholesterol.
