- 3-4 lb chicken (or you can use parts)
- 2/3 Cup Vegetable Oil
- 1/2 Cup Flour
- 4-5 Cup boiling water
- 4 tablespoons chili sauce
- 2 tablespoons worcestershile sauce
- 2 teaspoons hot pepper sauce
- 1 teaspoon dry mustard
- salt to taste
Directions

1Cut chicken into serving pieces. Pour oil into large, high fry pan (or roasting pan). Heat oil over medium heat until hot. Put chicken into pan and brown on both sides. Remove chicken from pan. Lower heat to medium-low and shake flour into oil. Wisk flour until smooth. Slowing add 4 cups boiling water (until medium thick). Bring to boil. Turn heat to low and wisk in chili sauce, worcestershire sauce, hot pepper sauce, and dry mustard. Add salt to taste. Wisk to get out any lumps. Add more water is mixture gets too think (1/4 cup boiling water at a time). Put browned chicken into mixture. Cover and cook over low heat for 35-40 minutes. Sauce should be a rich red/orange, if not add more chili sauce and a small amount of worcestershire sauce.
