- 6 hard-cooked eggs
- 1/4 c. mayonnaise
- 2 Tbsp. sweet pickle relish
- 2 tsp. prepared mustard
- 1/4 tsp. salt
- 1/8 tsp. pepper
- paprika
- 12 pimiento-stuffed olive slices
- fresh parsley sprigs
Directions

1Peel eggs; slice half lengthwise and carefully remove yolks. Mash yolks; add mayonnaise and stir well.

2Add relish, mustard, salt and pepper; stir well.

3Spoon yolk mixture into a decorating bag fitted with a large star tip.

4Pipe yolk mixture into egg whites.

5Sprinkle lightly with paprika.

6Top each stuffed egg with an olive slice and a sprig of parsley.

7Yields 6 servings.
