Deviled Potato Salad

Ingredients

  • 8 medium red potatoes, boiled
  • 2 bunches green onions, chopped
  • 1/2 c. chipped sweet pickles or dill
  • 1 c. light sour cream
  • 1 Tbsp. vinegar or pickle juice
  • 6 hard-boiled eggs, separated
  • 2 c. chopped celery or 1 tsp. celery salt
  • 1 c. light Miracle Whip or mayonnaise
  • 2 tsp. mustard

Directions

    Boil potatoes until done, but not mushy. Cool and peel.

    Boil eggs and cool with cold water.

    Set aside.

    Separate out yolks and mash until very mealy.

    Combine with Miracle Whip, sour cream and mustard. Mix well.
