- 4 hard-boiled eggs
- 3 Tbsp. mayonnaise
- 1 tsp. Dijon mustard
- salt
- freshly ground pepper
- 1 Tbsp. minced parsley or fresh herbs (optional)
Directions

1Shell the eggs and slice them in half lengthwise.

2Remove the yolks and mash them with the mayonnaise and mustard.

3Salt and pepper to taste.

4Mix until it is smoothly blended and creamy. Stuff equal amounts into the hollow of each egg white.

5Sprinkle parsley or fresh herbs on top, if desired.
