Deviled Tofu Kebabs

Ingredients
- 8 shallots or 8 button onions
- 8 small new potatoes
- 2 tablespoons tomato puree
- 2 tablespoons light soy sauce
- 1 tablespoon sunflower oil
- 1 tablespoon clear honey
- 1 tablespoon coarse grain mustard
- 300 g smoked tofu, cubed
- 1 courgette, peeled and sliced
- 1 red pepper, de-seeded and diced
Directions

1Put the shallots or button onions in a bowl, cover with boiling water and set aside for 5 minutes

2Cook the potatoes in a pan of boiling water for 7 minutes until tender.

3Drain and pat dry.

4Put tomato puree, soy sauce, oil, honey, mustard and seasoning in a bowl, then mix well.

5Toss the tofu in the marinade.

6Set aside for at least 10 minutes.

7Heat the grill.

8Drain and peel shallots or onions, then cook in boiling water for 3 minutes

9Drain well.

10Thread the tofu, shallots, potatoes, courgette and pepper on to 8 x 20 cm skewers.

11Grill for 10 minutes, turning frequently and brushing with remaining marinade before serving.
