- 3/4 lb. veal scallopini
- 1 Tbsp. flour
- 1 tsp. paprika
- 3/4 tsp. salt
- dash of pepper
- 1/4 c. finely chopped onion
- 3/4 c. condensed consomme
- 1/2 tsp. prepared mustard
- 1/2 c. yogurt
- 1 Tbsp. oil
Directions

1Dust veal lightly with flour; mix with paprika, salt and pepper.

2Heat oil in skillet.

3Add veal and saute quickly until golden all over.

4Remove veal.

5Add onion to pan drippings and saute few minutes.

6Stir in consomme and mustard and cook to blend flavors.

7Return veal to pan.

8Cover and simmer about 15 minutes until veal is tender.

9Just before serving, blend in yogurt.

10Makes 4 servings.
