Ingredients

  • 2 c. raisins
  • 2 c. flour
  • 1 tsp. soda
  • 1/2 tsp. salt (omit if using self-rising flour)
  • 1 1/4 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 3/4 c. oil
  • 1 c. unsweetened applesauce or fruit cocktail
  • 2 Tbsp. liquid sweetener
  • 1 tsp. vanilla

Directions

    Cook raisins in 2 cups water.

    Drain and reserve liquid. Blend next 5 ingredients.

    Stir into raisins.

    Add remaining ingredients including raisin liquid.

    Mix well and pour into a 9 x 9-inch pan or Bundt pan.

    Bake at 350° until toothpick comes out clean when inserted in top.
