Ingredients
- 1 c. apple juice concentrate, thawed
- 2 tsp. arrowroot or cornstarch
- 3 eggs, lightly beaten
- 1 heaping c. whole or broken pecans
- 1 Tbsp. butter or margarine, melted
- 1/2 tsp. vanilla
- 1/8 tsp. salt
- 9-inch partially baked pie shell
- 1 tsp. lemon juice
Directions

1Sprinkle arrowroot over concentrate apple juice in a small saucepan.

2Over low heat, stir until clear and thickened.

3Cool this.

4Beat in eggs, butter, vanilla, lemon juice and salt.

5Mix well.

6Stir in pecans and pour into a partially baked pie crust. Bake in preheated 400° oven for 10 minutes.

7Lower heat to 300° and bake 20 to 30 minutes or until set.
