Ingredients

  • 1 c. apple juice concentrate, thawed
  • 2 tsp. arrowroot or cornstarch
  • 3 eggs, lightly beaten
  • 1 heaping c. whole or broken pecans
  • 1 Tbsp. butter or margarine, melted
  • 1/2 tsp. vanilla
  • 1/8 tsp. salt
  • 9-inch partially baked pie shell
  • 1 tsp. lemon juice

Directions

    Sprinkle arrowroot over concentrate apple juice in a small saucepan.

    Over low heat, stir until clear and thickened.

    Cool this.

    Beat in eggs, butter, vanilla, lemon juice and salt.

    Mix well.

    Stir in pecans and pour into a partially baked pie crust. Bake in preheated 400° oven for 10 minutes.

    Lower heat to 300° and bake 20 to 30 minutes or until set.
