- 1/2 c. vegetable oil
- 6 tsp. Sweet 'N Low
- 2 eggs
- 1 c. pumpkin
- 1/3 c. water
- 2 c. flour
- 1 c. quick oats
- 1 tsp. soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. cloves
- 1/2 tsp. baking powder
- 1/2 c. chopped walnuts or pecans
Directions

1In large bowl, mix oil, Sweet 'N Low, eggs, pumpkin and water. Stir in remaining ingredients.

2Pour into mini loaf pans.

3Bake at 350° for about 35 minutes.

4Remove from pans and cool.

5May use regular loaf pan, but will need to bake longer.
