Diet Pineapple Muffins

- 15 Tbsp. sifted flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 8 packets sugar substitute
- 1/2 c. crushed pineapple, drained
- 2 Tbsp. margarine
- 1 egg
- 1/3 c. pineapple juice or 1/3 c. skim milk
Directions

1With pastry cutter or two knives cut dry ingredients and margarine together until flour mixture is the size of peas.

2In another small bowl beat egg.

3Add beaten egg to dry ingredients, mix gently with spoon.

4Add pineapple last and mix until blended. Spray muffin tin with Pam.

5Divide dough into 6 muffin tins and bake at 350° for 30 minutes.
